Baba Ghanouj

Baba GhanoujThis recipe is more known as Baba Ghanouj, grilled eggplants with Bell Pepper, a very delicious appetizer for all times that can be served with all meals. The recipe is for 5 persons and require about 10 minutes for preparation.

Ingredients

  • 1 kg (32oz) grilled eggplants, washed then peeled
  • 1 green bell pepper, finely chopped
  • 1 medium onion, finely chopped
  • 3 cloves of garlic, crushed with a dash of salt
  • 1/2 kg (16 oz) tomatoes, peeled and finely chopped
  • 1/2 cup lemon juice
  • 1 teaspoon salt
  • a dash of olive oil

FatooshA very delicious Lebanese Salad containing toasted bread, parsley, tomato, and other vegetables. The recipe is for 5 persons and require about half an hour between preparation and cooking.

Ingredients:

  • 1/2 Lebanese round bread (pitta), toasted
  • 3 medium firm tomatoes, washed and chopped
  • 3 slender cucumbers (250g\19 oz), washed and chopped
  • 3 medium radishes (250g\9 oz) (1 cup), washed and chopped
  • 4 spring onions, washed and coarsely chopped
  • 1 medium onion (1/4 cup), roughly chopped
  • 1/2 cup lemon juice
  • 2 cloves garlic, crushed with a pinch of salt
  • 1/2 teaspoon dried mint
  • 2 tablespoons vinegar
  • 1/2 cup olive oil
  • 1 cup coarsely chopped fresh mint leaves
  • 1 cup coarsely chopped parsley
  • 1 cup small purslane leaves
  • 1/2 teaspoon ground sumac
  • 1/2 cup coarsely chopped sweet green pepper
  • 1 teaspoon salt
  • 8 crisp cos (2 cups) lettuce leaves, torn into bite size pieces

Kabab Fingers

Kabab FingersCalled also Kufta fingers, very delicious , easy to prepare, and can be considered as the main meal. Kabab Fingers are made of parsley, onion and bread. The recipe require is for 3 persons and require about 30 minutes for preparation and cooking.

Ingredients :

  • 500 g (16 oz) finely minced lean meat
  • 2 tablespoons chopped fresh parsley
  • 1 grated medium onion
  • 2 tablespoons shortening or butter
  • 1 teaspoon salt
  • 1/2 teaspoon ground sweet pepper

BaklawaThe first sweet recipe on our website will be obviously the Baklawa with two varieties ! Greek-style Baklawa, which is common in the west, uses honey in the syrup. More typical Egyptian Baklawa does not. Recipes for syrup variations are included here. A tip to make it good Never pour hot syrup over hot baklawa; it will make it soggy ! Syrup must either be cool and poured over hot baklawa or hot and poured over cooled baklawa. Enjoy !
Ingredients :

  • 2 cups walnuts, finely chopped
  • 1 cup almonds, finely chopped (optional – this is found in Greek baklawa)
  • 1 cup sugar
  • 2 cups clarified, melted butter
  • 2 Ts. cinnamon
  • 1 Tb. Orange blossom water (mazahar)
  • 1 package phyllo dough (1 lb. Or 454 gms.)
