BaklawaThe first sweet recipe on our website will be obviously the Baklawa with two varieties ! Greek-style Baklawa, which is common in the west, uses honey in the syrup. More typical Egyptian Baklawa does not. Recipes for syrup variations are included here. A tip to make it good Never pour hot syrup over hot baklawa; it will make it soggy ! Syrup must either be cool and poured over hot baklawa or hot and poured over cooled baklawa. Enjoy !
Ingredients :

  • 2 cups walnuts, finely chopped
  • 1 cup almonds, finely chopped (optional – this is found in Greek baklawa)
  • 1 cup sugar
  • 2 cups clarified, melted butter
  • 2 Ts. cinnamon
  • 1 Tb. Orange blossom water (mazahar)
  • 1 package phyllo dough (1 lb. Or 454 gms.)
  • Syrup (see below for variations)

Palestinian Msakhan ChickenThis is one of the best Palestinian receipes, but it is known all over the arab world because it is very delicious. The receipe is for 4 persons and require about 1h30 for preparation and cooking.

Ingredients :

  • 1 chicken (about 1 kg \ 32 oz) , cleaned and boned
  • 1 teaspoon salt (as desired)
  • 1/2 teaspoon ground black pepper
  • a dash of olive oil
  • 1/2 cup of vegetable oil and butter mixture
  • 3/4 cup roughly chopped onion
  • 3 tablespoon ground sumac
  • 1 large pitta (30 cm diameter), opened (makes 2 pieces)

Sambousik

SambousikSambousik is usually served as an appetizer. It is an important meal in Saudi Arabia and the Golf with Meat, Cheese, or Leek. The recipe is for 4 persons and require 1h30 between preparation and cooking.

Ingredients :

  • 5 cups all purpose plain flour
  • 1 1/2 cups lukewarm water
  • 2 tablespoon salt
  • 2 tablespoon sugar
  • vegetable oil for deep frying
  • 1 cup oil

Cheese Filling :

  • 425 g (14 oz) white cheese (Ikawi Altishiki)
  • 1/4 cup finely chopped fresh parsley
  • 1/4 teaspoon ground cayenne pepper

Meat Filling :

  • 300 g (10 oz) ground meat
  • 1 tablespoon shortening or butter
  • 1/4 cup fried pine nuts
  • a dash of ground allspice
  • 1/4 teaspoon salt

Leek Filling :

  • 1/2 cup finely chopped onion
  • 1 tablespoon shortening or butter
  • 1 cup finely chopped leek
  • 1/4 teaspoon salt
  • a dash of pepper

This salad is usually served with seafood, delicious salad and special for its harmonious colors with beetroots and sesame paste. Recipe is for 5 persons and require 1h20 between preparation and cooking.

  • 1 kg (32 oz) beetroots, boiled till tender (about 1 hour)
  • 1/2 cup sesame paste
  • 1/2 cup lemon juice
  • 1 tablespoon finely chopped fresh parsley

Falafel or Taamia

Falafel or TaamiaFalafel is the Middle East Snack, a popular meal that you’ll enjoy as sandwich or served hot with lemon wedges and a salad, known also as Taamia. The recipe require about 3 hours between preparation and cooking.
